As the harvest approaches, all attention is taken up by tasting the grapes in the vineyard, plot by plot.

When they reach the height of aroma and taste, the harvest starts.

Particular attention is paid to selecting the best grapes.

Juice is selected as it comes out of the press ans each "batch" is made into wine separately.

Treatment, which is always damaging to quality, is kept to a minimum mainly thanks to long production periods and prolonged stirring in then lees.

We carried out blind tastings throughout the production process in order to make up our different vintages.
